Hump Day Pick Me Up

Wednesdays are hard--there's no doubt about that. Usually by Wednesday, we're on the brink of tears at the realization that we still have two more days before we can close our laptops, turn off our cellphones, and say PEACE to our work responsibilities. Wednesdays are like that boy who sits next to you in Biology class that asks you for a pencil everyday, but never your number--such a tease. {We've all been there...admit it.} It's also usually the day you start requesting two shots of espresso during your morning Starbucks run, take a mid day nap with your eyes open at your computer, and starting wondering if at Happy Hour that day it's acceptable to order a bottle of wine... for yourself.

So what do you do when Wednesdays feel so close, yet soooooo far away, and you need a little pick me up to get you through the rest of the week? 

You make your Wednesday a little bit sweeter.

Hello Cupcakes! I'm 99% sure cupcakes could bring World Peace if they just gave it a chance. Cupcakes are made up of happiness, sunshine, friendship & that stuff they call sugar that makes you love life a little bit more--Tell me a person whose day hasn't been improved by eating a cupcake, and I'll call them a liar... but really. To say I believe cupcakes hold magical powers is an understatement. {I DO BELIEVE IN CUPCAKES, I DO, I DO.}

Recently we had Cupcake Wars where our friends competed for the most creative--best tasting & looking cupcakes on the block. Lil sis decided to dazzle the contestants by creating a Sundae inspired cupcake, and I thought I'd shoot to put them in a food coma with a Reece's brownie creation. Snacking {more like inhaling} these little pieces of magic really made our week more enjoyable, and I fully believe they could be a game changer for you as well!

Give it a go... I dare you.

Peanut Butter Cup Stuffed Brownie Cupcakes With Peanut Butter Buttercream Frosting

Ingredients: 

1 Box of Milk Chocolate Brownie Mix (and ingredients on the back of the box)

1 Bag of Reese’s Pieces Peanut Butter Cups

¾ Cup of Butter

¼ Cup of Shortening

½ Cup of Creamy Peanut Butter

1 TSP of Vanilla

½ Cup of Heavy Whipping Cream

4 Cups of Powered Sugar

Directions: 

1. First, follow the instructions on the back of the brownie box. Before filling up the cupcake liners, put a dab of creamy peanut button on top of the Reese’s pieces cup, and then place it in the center of the liner. Once the brownie mix is ready, fill up the cupcake liners ¾ of the way and cook according to instructions.

2. While the brownies are cooking, mix up the peanut buttercream frosting! In a mixing bowl, combine the butter, shortening, peanut butter and vanilla. Once it’s smooth, add in the powered sugar and half-cup of whipping cream, and mix on high until the frosting is fluffy. If it doesn’t quiet have the taste you’re looking for, add in more powdered sugar, whipping cream, and peanut butter.

3. Once the brownies are cooled, top the brownies with the peanut butter buttercream frosting, and garnish your cupcake with crumbled up Reece’s Pieces! Add a full Reece’s Pieces Cup wedged into the frosting to finish!

 

Ice Cream Cone Cupcakes

Ingredients: 

1 Box of Chocolate Cake Mix (plus ingredients on back of box)

24 Cake Cones

Vanilla Icing

Hot Fudge Sundae Syrup

Sprinkles

Cheeries

Directions:

1. Preheat your oven to 350 degrees F. Put one cake cone in the bottom of each muffin cavity. Set aside.

2.Prepare your cake batter according to package directions. Portion your batter into each cake cone, about 2/3 full or just toward the middle of the cone. Don’t fill too much higher or it may overflow. Very carefully put the pans into the oven and bake for approx. 15 minutes or until a toothpick inserted in the center of the cake comes out clean. Cool completely.

3. Add the icing to top of the cupcakes. Heat the hot fudge sauce for about 10 seconds. You want it to be on the verge of becoming liquidy but not quite there yet (too liquidy and it’ll melt the frosting, but not heated up at all will result in an ugly  glob). Spoon a small spoonful of hot fudge sauce onto the tops of your frosted cupcakes. Top with sprinkles and a cherry. Serve immediately.
